While cruising through the Hiawatha Farmers Market I spotted a time saver. Nature's Pantry Foods, All Gluten Free, Creamy Coconut Pie mix! We rarely have desserts due to simple prep times and preferred choice of less sugar in our life. However this time I snagged a bag to see what this company could do. And boy did they do great!
Here are the simple step instructions and ingredients.
coconut * sugar * white rice flour * potato starch * brown rice flour * tapioca flour * and xanthan gum
bag premixed * 4 eggs * 1/4 cup butter * 2 cups milk (we used hemp milk)
"Preheat oven to 350. Mix 4 beaten eggs, 1/4 cup butter, 2 cups milk. Add try mix. Blend well. Pour into greased 9" pan, (instructions say 8" but that would surely overflow, a 9x13 would work well also). Let rest for 5 minutes (this allows the custard to settle to the bottom, making a crust). Bake 35-40 minutes or until light browned on top (When I checked it at 40 it was still totally liquid, I did 10 minutes, then 5, then 5 again. It probably could've gone another 5-10. Also the larger the pan/thinner the layer the less additional time needed. ALSO! This is for 2 pies, I poured all of mine into one pan). Chill for an hour then serve.

5 would've been sugar in the raw or sweetened with turbinado. Some may say xanthan is controversial as well, however it comes in handy in gluten-free recipes frequently.
